Course 1- your choice of:
Boudin Blanc, caramelized apple, shallot calvados jus frisee, crispy pork belly
Mussel, spinach, wine, cream, swiss cheese gratin
Endive, watercress, raddicchio, goat cheese, rostido walnut vinaigrette
Tuna tartar, caper, onion, anchovy, mustard, parsley, caviar creme fraiche

Course 2- your choice of:
Roasted chicken, tarragon essence, purple mash potato, haricot vert
Lamb stew, duck confit, pork sausage, cannelini beans, root vegetables
Grilled salmon, brussel sprout, pine nut, lemon peel spicy saffron butter
Seared Cod, nicoise, garlic, tomato, creamed chard polenta

Course 3- your choice of:
Apple tart, chantilly, vanilla bean ice cream
